Weekly Vegan Meal Planning Menu

I typically use my tried-and-true meal planning process to decide what we’re going to eat during the week, but after a visit to the Folsom Zoo Sanctuary and lunch at Chipotle on Saturday, we had an “oh, there’s a Trader Joe’s across the street” moment. The closest one to our home is 20 minutes away, so we took the opportunity to get our shopping done.

Yea, we overdid it.

Ninety-nine percent of the time I shop with a grocery list; going without a list in my hand leaves me very off-kilter. I have almost no clue what to buy which means I tend to over buy. Phillip being with me meant an overflowing cart of stuff we surely do not need. At least we were at Trader Joe’s where stuff is reasonably priced.

As we browsed the aisles, I cobbled together a list of what we could make. This post is taking that randomness and helping me think through what I’ve stuffed our fridge with. Here it goes…

  • Pesto Pizza: We had this Saturday night. The recipe came from Kathy at Healthy, Happy Life, and it was shout in joy good.
  • Veggie Sushi Bowls: I never got around to these last week, so Sunday night it is. I thought this was a brain child of mine, but low-and-behold an internet search reveals lots of people have had this glimmer of lazy sushi insight. I’m planning cucumber, green beans, carrots, avocado and red bell pepper over rice with a miso mayo drizzle.
  • Tofu Florentine: I’m going to riff off the recipe in Veganomicon and add in mushrooms.
  • Steamed veggies over brown rice topped with Yumm! sauce: When we lived in Portland, we would visit Cafe Yumm! which makes delicious bowls topped with Yumm! sauce. I’m always looking for something to make brown rice & veggies appetizing and thought of that garlicky, creamy vegan confection. You can order it online (minimum 6 jars at a time), so now I have a fridge full of the stuff.
  • Pesto Pasta: I’ve got leftover pesto from the weekend pizzas. I’ll serve this with a salad. Yes, I have a weird thing about always having to have a fruit or veggie at every meal.
  • Ranch “Chicken” Salad: Greens with carrots, corn, peas, red onion & some fake-out chicken topped with vegan ranch.
  • Zucchini Bread: If the mood strikes me, I’ve got the stuff to bake some up now.
